Spiced Red Cabbage

50 gram (2 ounce) butter

2 medium red onions, finely diced

1 medium red cabbage, approx. 900 g (2 lb)

3 tablespoons red wine vinegar

1 teaspoon Sea Salt

1 teaspoon Cinnamon Ground

¼ teaspoon Ground Nutmeg

¼ teaspoon Ground Black Pepper

2 medium cooking apples, peeled and sliced

Instructions
- 1 Pre-heat the oven to 180°C, 350°F, Gas Mark 4.
- 2 Heat the butter in a large pan and gently fry the onion for 2-3 minutes. Finely chop the cabbage and add to the pan. Stir in the vinegar, Salt, Cinnamon, Nutmeg and Black Pepper. Continue to cook for 3-4 minutes, stirring frequently.
- 3 Add the apple and transfer to an ovenproof dish. Cover and cook in the oven for 1 hour or until the red cabbage is tender. Stir at the end of cooking and serve.
