Large flat mushrooms topped with a combination of cheddar cheese and spring onions, flavoured with Garlic, Parsley and Black Pepper. An ideal starter, side dish or lunch.
- 1 Pre-heat the grill.
- 2 Brush the mushrooms with oil, season and place gill side down under the grill for 5 minutes.
- 3 Meanwhile mix the cheese with the spring onions, Garlic and Parsley. Season well with Black Pepper and Salt to taste. Turn the mushrooms over and fill with the cheese mixture. Grill for 5 minutes.
- 4 Serve with a mixed herb salad, cherry tomatoes and crusty bread.
