Veggie Cajun Breakfast Bean Burrito

1 tablespoon olive oil

½ onion, diced

1 garlic clove, peeled and crushed

1 red pepper, chopped

1 pack of extra firm tofu (approx. 250 g) drained and crumbled

½ a 400g tin black beans, drained and rinsed

2 tablespoons Cajun Seasoning
-
6 wraps
-
30 grams baby spinach
-
6 tablespoons tomato salsa
-
2 avocados, halved, de-stoned, peeled and sliced

1 lime

Instructions
- 1 Place a large frying pan over a medium heat and add the olive oil. Once hot, add the onion, garlic and pepper and fry for 3-5 minutes or until soft. Add the crumbled tofu, black beans and Schwartz Cajun Seasoning, and cook for a further 5 minutes.
- 2 Place the wraps onto a clean surface and divide the spinach between the wraps. Top each wrap with the Cajun tofu bean mixture, followed by the salsa, avocado and a squeeze of lime.
- 3 Tuck and fold the wraps to create the burrito. Enjoy straight away!
- 4 Tip: Add sweetcorn for extra vegetables.
