  • 1 tablespoon olive oil

  • ½ onion, diced

  • 1 garlic clove, peeled and crushed

  • 1 red pepper, chopped

  • 1 pack of extra firm tofu (approx. 250 g) drained and crumbled

  • ½ a 400g tin black beans, drained and rinsed

  • 2 tablespoons Cajun Seasoning

  • 6 wraps

  • 30 grams baby spinach

  • 6 tablespoons tomato salsa

  • 2 avocados, halved, de-stoned, peeled and sliced

  • 1 lime

Instructions

  • 1 Place a large frying pan over a medium heat and add the olive oil. Once hot, add the onion, garlic and pepper and fry for 3-5 minutes or until soft. Add the crumbled tofu, black beans and Schwartz Cajun Seasoning, and cook for a further 5 minutes.
  • 2 Place the wraps onto a clean surface and divide the spinach between the wraps. Top each wrap with the Cajun tofu bean mixture, followed by the salsa, avocado and a squeeze of lime.
  • 3 Tuck and fold the wraps to create the burrito. Enjoy straight away!
  • 4 Tip: Add sweetcorn for extra vegetables.
